通过对一起群体亚硝酸盐食物中毒案例的调查,分析此类事件的发生原因,运用流行病学调查及临床诊断和实验室检验(用盐酸萘乙二胺法检测样品中的亚硝酸盐含量)等方法,检测引起食物中毒的剩余食物及中毒患者呕吐物中亚硝酸盐含量。结果证明,本次食物中毒为误食亚硝酸盐引起的食源性急性亚硝酸盐中毒。提示餐饮业从业人员密切注意对食物中必须使用的原料及调料的鉴别和使用量,加强培训和监督管理,避免由误食和超量涉入亚硝酸盐引起的食物中毒事件的发生,保障人们的健康和生命安全。
