采自北京市5个区县7个生产厂家的水果制品,包括果酱、果汁和果酒共109件,进行了霉菌分离计数,以果酱的检出率最高,达87.0%。菌相分析,优势菌为青曲霉。对其中的23株菌进行产展青霉素能力测定,产黄青霉、扩张青霉、圆弧青霉和土曲霉的产毒率依次为20.0%、12.5%、75.0%和0%。测定28份果酱和果酒中自然污染的展青霉素,阳性率分别为31.3%和0%。
A total of 109 fruit products, including jams, fruit juices and fruit wine, were collected from 7 manufacturers in 5 districts and counties of Beijing. The fungi were separated and counted, with the highest detection rate of 87.0%. Bacterial phase analysis, the dominant bacteria Aspergillus flavus. The production of penicillin in 23 strains of them was tested. The virulence rates of Penicillium chrysogenum, Penicillium expansum, Penicillium circularum and Aspergillus terreus were 20.0%, 12.5%, 75.0% and 0%, respectively. The natural contamination of patulin and fruit wine in 28 samples was determined. The positive rates were 31.3% and 0% respectively.
