[目的]了解厦门市集中式餐饮具消毒服务机构的现状和集中消毒餐具的卫生状况,为卫生监管提出对策。[方法]据国家有关卫生规范、卫生标准和检验方法,进行监督检查和现场采样送检。[结果]我市集中式餐饮具消毒服务公司在生产场所布局、卫生设施、卫生质量控制、消毒设施和方法、消毒后餐饮具包装、从业人员卫生状况上存在较严重的不符合卫生状况的现象,经营者和从业人员多数未认真了解有关消毒服务的卫生法律法规及规范要求。仅消毒方法基本达到要求。采样检测集中式消毒餐饮具合格率为84.54%(164/194)。[结论]餐具集中消毒服务是适应市场需求的一种新兴行业,可以节约成本,提高餐饮业特别是中小型餐饮业的餐饮具洁净度和消毒率。卫生行政部门应尽快建立相应的规范和标准,加强监管,规范企业生产行为,从根本上保证人民的身体健康。
[Objective] To understand the status quo of centralized catering tableware disinfection service agencies in Xiamen and health status of centralized disinfection tableware, and put forward countermeasures for health supervision. Only disinfection methods basically meet the requirements. Sampling and testing of centralized disinfection tableware with a pass rate of 84.54% (164/194). [Conclusion] The tableware disinfection service is an emerging industry that can adapt to the market demand, which can save costs and improve the cleanliness and disinfection rate of the tableware in the catering industry, especially in the small and medium-sized catering industry. Health administrative departments should establish the corresponding norms and standards as soon as possible, strengthen supervision, regulate the production behavior of enterprises, and fundamentally guarantee the people’s health.
