本为应用气相色谱法,对典型植物油脂和动物油脂的脂肪酸组成进行了测定。结果发现,植物油脂与动物油脂中的肉豆蔻酸含量存在明显差异。地沟油往往是既含有植物油又含有动物油的混合油脂,对照实验证明地沟油中肉豆蔻酸含量有别于植物油和动物油。故可通过此法对未知油品的特征性脂肪酸肉豆蔻酸含量进行测定,从而鉴别地沟油、合格食用油与掺入地沟油的食用油。
This is the application of gas chromatography, the determination of fatty acid composition of typical vegetable oils and animal fats. The results showed that there was a significant difference in myristic acid content between vegetable and animal fats. Waste oil is often a mixture of both vegetable oils and vegetable oils. Control experiments show that the content of myristic acid in cooking oil is different from that of vegetable oils and animal oils. Therefore, this method can be used to determine the content of myristic acid, a characteristic fatty acid of unknown oil, so as to identify the cooking oil, qualified cooking oil and cooking oil mixed with waste oil.
