目的分析惠州市生产加工环节食品质量状况,为提出有针对性的卫生监管措施提供依据。方法对惠州市2007-2012年质量计量监督检测所抽检的生产加工食品的检验数据进行分类、对比,分析影响质量的因素。结果 2007-2012年间,抽检生产加工食品21891批次,其中合格18356批次,批次合格率为83.85%;食品标签合格率为95.26%,食品内在质量合格率为88.59%。食品内在质量不合格的原因主要是微生物指标超标,不合格率为6.03%;其次为理化指标,不合格率为5.04%;理化及微生物指标均不合格率为0.34%。食品种类中,豆制品、蔬菜制品和饮料的不合格率较高。结论惠州市生产加工环节食品质量总体良好,但仍应加强微生物指标的监测,并提高食品标签的规范程度。
Objective To analyze the quality of food in the production and processing sectors in Huizhou City and provide the basis for the proposed health supervision measures. Methods The test data of the processed and processed food sampled from 2007 to 2012 in Huizhou City for quality supervision and inspection were classified and compared to analyze the factors affecting the quality. Results Between 2007 and 2012, a total of 21,891 batches of processed and processed food products were obtained, of which 18,356 batches were qualified. The passing rate of batches was 83.85%. The passing rate of food labeling was 95.26% and the passing rate of food quality was 88.59%. The main reason for the unqualified food quality is the excessive microbial index, the unqualified rate is 6.03%; followed by physical and chemical indicators, the unqualified rate is 5.04%; and the unqualified rate of physical, chemical and microbial indicators is 0.34%. Food types, soy products, vegetables and beverages higher failure rate. Conclusion The quality of food in Huizhou production and processing sector is generally good, but the monitoring of microbial indicators should be strengthened and the standard of food labeling should be improved.
