赣南大多数县都产柿果,尤其兴国、于都、南康、大余、赣县等县。柿果有甜涩之分,涩柿需经脱涩,方可食用。涩林中因含有可溶性单宁,故有强烈的涩味。现介绍几种脱涩方法。一、乙烯利脱涩。用250ppm乙烯利溶液喷柿树使柿果面潮湿,或将采后的果实连筐在乙烯利溶液中浸3分钟,经3~10天便可脱涩。
