新世纪的到来,给众多的餐饮业也带来了无限商机。各地政府及有关部门对餐饮业十分重视,均提出了振兴、创新、发展以及产业化的口号,不少地方已经取得实效。加之各地的交流日益频繁,各大菜系相互溶合,不同风味的菜肴同时经营,特色的连锁店红红火火,这显示了餐饮市场的百花齐放,风光无限;随着加入WTO的日益临近,对外交流的加深,这一切为国菜的发展提供了良好的机遇和广阔的空间,但如何使国菜走出国门,站住脚根,创出效益,是值得餐饮业认真思考的。笔者认为,应从以下几点入手。 首先,品牌领先,合理定位。品牌领先,包括两个方面,即餐饮企业的品牌和菜肴的品牌。要以在世界上

Local governments and relevant departments attach great importance to the catering industry and have all raised the slogan of rejuvenating, innovating, developing and industrializing many places that have achieved substantial results. Coupled with the increasing frequency of exchanges around the major dishes mixed with each other, different flavors of dishes at the same time operating characteristics of the chain booming, which shows the flourishing food and beverage market, unlimited scenery; as accession to WTO is approaching, foreign exchange Deepen, all these provide good opportunities and broad space for the development of national cuisine.
