目的了解南京市高校大学生对食品中丙烯酰胺的知晓度以及大学生人群膳食丙烯酰胺暴露水平,为开展相关食品安全知识的宣传教育提供依据。方法采用24 h膳食回顾法,对随机整群抽取的南京市5所高校的1 000名学生进行连续3 d的膳食调查;并运用自行设计的问卷调查研究对象的膳食丙烯酰胺知晓度。结果 65.3%的学生从未听说过丙烯酰胺,仅有5.1%的学生知晓其危害;膳食丙烯酰胺的平均暴露量为每日1.50μg/kg,46.2%的受访者暴露量高于世界卫生组织和国际粮农组织所给出的人均膳食丙烯酰胺暴露估计量(每日0.8μg/kg)。结论南京高校大学生人群对膳食中丙烯酰胺的知晓率较低,而人群暴露量却很高,应加强相关食品安全知识的宣传力度。
Objective To understand the awareness of acrylamide in college students in Nanjing and the dietary exposure of acrylamide to college students in order to provide the basis for the publicity and education on food safety knowledge. Methods A 24-h dietary review method was used to investigate the dietary acrylamide knowledge of 1,000 students from 5 colleges and universities in Nanjing. RESULTS: 65.3% of the students had never heard of acrylamide and only 5.1% of students were aware of the harm. The average exposure to dietary acrylamide was 1.50μg / kg daily, 46.2% of respondents were exposed higher than world health Per capita estimated dietary exposure to acrylamide (0.8 μg / kg daily) as given by the Organization and the International Food Safety Organization. Conclusions There is a low awareness rate of acrylamide in the diet among university students in Nanjing, but the population exposure is very high. The publicity of relevant food safety knowledge should be strengthened.
