客家传统食品是客家人继承百越民族饮食文化和古中原的饮食传统,利用当地资源加工出来的食品,具有取材广泛,加工方式独到,风味独特等特点而为人喜爱。然而,长久以来,客家人没能很好的对客家传统食品进行挖掘、整理、提升,致使很多客家传统食品由于开发不当变味,或开发不力消失。赣南是客家人最早的聚居地之一,也是客家人最多的地区。因此,怎样对客家传统食品进行保护性开发是当地政府和人民面临的一个非常迫切的问题,本文结合赣南地区实际对这一问题进行探讨。
Hakka traditional food is the Hakka heritage of the Baiyue ethnic food culture and the ancient Central Plains diet tradition, the use of local resources processed food, with a wide range of raw materials, processing unique, unique flavor and so loved. However, Hakka people have not been able to excavate, organize and upgrade traditional Hakka food for a long period of time, resulting in many Hakka traditional food products being badly smeared or poorly developed. Gannan is one of the earliest settlements of Hakka people and also the largest Hakka region. Therefore, how to carry out the protective exploitation of traditional Hakka food is a very pressing issue that the local government and people are facing. This article explores this issue in light of the actual conditions in southern Jiangxi.
