霉菌在自然界分布很广,可以污染多种粮食和食品。其中有些霉菌的代谢产物,能对动物的神经、消化、泌尿及血液等系统引起毒害,这类物质统称为霉菌毒素。霉菌毒素引起人类急件中毒的例子,已有不少报道。近十多年来,一些从事肿瘤病因学研究的人员,越来越重视深入研究霉菌毒素与人类肿瘤发生的关系,逐渐观察到某些霉菌毒素对动物的致癌和促癌作用。实验致癌的霉菌毒素实验研究发现的致癌性霉菌毒素已有多种(附表)。较早发现的是麦角碱,用含5%麦角的饲料喂大鼠二年后,约半数大鼠
Mold is widely distributed in nature and can contaminate many kinds of food and foodstuffs. Some of the mold metabolites, which can cause poisoning to animals such as nervous system, digestive system, urinary system and blood system, are collectively referred to as mycotoxins.
