将一个榨糖季节分为五期,对八个糖厂生产的白砂糖进行卫生质量探讨,初步摸清了白砂糖在制炼过程中杂质含量的变化情况。结果表明,同一榨糖季节生产的白砂糖杂质含量并非固定不变,其中以砷含量波动较大。文章分析了120件白砂糖七项指标全部达标的原因。调查发现,副产品中赤砂糖及糖蜜含金属杂质量均明显高于白砂糖(P<0.01)。提示:赤砂糖作为食品不宜直接食用;用糖蜜制作焦糖色,必须澄清处理除杂。文章报道了出罐白砂糖细菌检出率明显低于仓库糖(P<0.01),为改革白砂糖的包装材料和方法,提供了科学依据。同时,为制糖工业开展全面卫生质量管理提供了参考。
