目的调查一起食用卤制品引起急性食物中毒事件的原因,为今后处置相应中毒事件提供参考。方法采用流行病学方法调查,应用国标开展实验室定量亚硝酸盐检测和确诊。结果中毒患者出现头晕、口唇发紫发绀、乏力、精神萎靡等以高铁血红蛋白血症为主的临床表现,经治疗2名中毒患者均痊愈;检测患者食用的卤制品中亚硝酸盐平均含量6 200 mg/kg,结合流行病学调查和临床诊断治疗,确诊为急性亚硝酸盐食物中毒。结论流动摊贩的食品安全管理漏洞不容忽视,食品添加剂的非法、超标使用仍然需要加强管理,建议相关部门加强流动摊贩的管理。
Objective To investigate the causes of acute food poisoning caused by the consumption of halogen products and to provide reference for the future disposal of poisoning incidents. Methods Epidemiological survey method, the application of national standards to carry out laboratory quantitative nitrite detection and diagnosis. Results Toxic patients showed dizziness, purple lips, fatigue, apathetic and other methemoglobinemia-based clinical manifestations, the treatment of two poisoning patients were cured; detection of patients with halogen products, the average content of nitrite 6 200 mg / kg, combined with epidemiological investigation and clinical diagnosis and treatment, diagnosed as acute nitrite food poisoning. Conclusion The loopholes in food safety management of mobile street vendors should not be overlooked. The illegal and excessive use of food additives still needs to be strengthened. It is suggested that relevant departments should strengthen the management of mobile vendors.
