目的:了解广州市海珠地区海产品中副溶血性弧菌的污染状况,初步确定可能污染副溶血性弧菌的高危食品,为食物中毒监测提供科学依据和为食品安全的危险性评估提供依据。方法:按照GB/T4789.7-2008对样品进行副溶血性弧菌分离、生化鉴定。结果:检测甲贝壳、鱼类、虾蟹类、养殖水、珠江水5类样品共289宗,检出副溶血性弧菌64宗,检出率22.14%;5类样品中副溶血性弧菌阳性率最高的为虾蟹类产品(41.94%)。结论:海珠地区水产品副溶血性弧菌污染较为严重,存在饮食安全隐患,应进一步加强对水产品加工销售环节副溶血性弧菌主动监测和污染控制。
OBJECTIVE: To understand the pollution of Vibrio parahaemolyticus in marine products in Haizhu district of Guangzhou and to initially identify the high-risk foods that may contaminate Vibrio parahaemolyticus, thus providing a scientific basis for food poisoning monitoring and providing a basis for the risk assessment of food safety. Methods: Vibrio parahaemolyticus was isolated and biochemically identified according to GB / T4789.7-2008. Results: A total of 289 samples of 5 species of shellfish, fish, shrimp and crab, farming water and Pearl River were detected. 64 cases of Vibrio parahaemolyticus were detected, with a detection rate of 22.14%. Vibrio parahaemolyticus The highest positive rate for shrimp and crab products (41.94%). Conclusion: The pollution of Vibrio parahaemolyticus in aquatic products is more serious in Haizhu district. There is a hidden danger of food safety. Active surveillance and pollution control of Vibrio parahaemolyticus in aquatic products processing and sales should be further strengthened.
