为加强对卤菜制售行业的卫生监管,提高张家港市卤菜制售业的整体卫生水平,2007年着重对卤菜加工场所开展专项整治工作。整治前的卤菜加工场所大多数基础设施简陋,原料处理(粗加工、切配、腌制等)、烧煮(烤)间、成品冷却、用具洗消等各环节均存在不同程度的安全隐患。通过统一标准、宣传培训、督促整改、部门协作等手段,经过9个月的整治,使全市235家卤菜加工场所硬件设施到位,自身管理水平有所提高,从而有效降低了食物中毒的风险性和危害程度。
In order to strengthen the health supervision and management of Lucaifu production and marketing and improve the overall hygiene level of Lucai production and marketing in Zhangjiagang City, 2007, special focus was laid on the special remediation work on Luopan processing sites. Before rehabilitating, most of the basal processing facilities are of poor infrastructure, raw material handling (roughing, cutting, salting, etc.), cooking (baking), finished products cooling, utensils decontamination and other links all have varying degrees of potential safety hazard. After 9 months of remediation through unified standards, publicity and training, supervision and rectification, and departmental collaboration, the hardware facilities of 235 Luzhu processing venues in the city were in place and their management level was raised, thus effectively reducing the risk of food poisoning and the level of danger.
