发展食用菌生产,除一部分鲜品供应市场外,绝大部分需加工成干制品和腌制品出售。加工质量的好坏,直接关系到产品的等级和经济价值。这里介绍几种简易的食用菌加工方法: 一、干制方法干制方法主要是通过阳光曝晒、或煤柴烘焙,以及电烤等用热源迫使菇、耳降低含水量而干燥。由于各种食用菌的特性不同,采用的热源也各有异,干燥的方法有以下几种: (1) 晒干法:主要通过阳光曝晒,这是比较常用而又经济的干燥方法。适合于银耳、平菇、凤尾菇、黑木耳、朴菇、金针菇、猴头等许多食用菌的加工。
