厨房少不了电器、炉具等工具。随着科技进步,烹调饮食逐渐开创了无火煮食一途。所谓无火煮食,便是没有明火的一种煮食方法。凡是没有明火的煮食工具,都可归入无火煮食族。其中电热煮食炉(红外线炉头)占有重要位置,原理是每个炉头内部有一个红外线圈,启动后以电力发热,热力直接传导到烹调器皿。烹调器皿的配合很重要,要选择平底的款式,使器皿有大幅的面积传热。
