前言牛乳是营养食物上最完美的食料,因其所含的营养成份,诸如脂肪、蛋白质、乳糖、矿物质及维他命等,都是生命上不可缺少的要素。虽然目前各大都市所有的乳场之产乳量,还不能满足大众之所需,但相信随着祖国的大规模经济建设之后,畜牧事业也会得到适当的发展的。南昌是一个具有三十余万人口的城市,在这里也有大小牛乳场四十四家,乳牛四百余头,每日总共产乳约三千余磅。去年秋季开始,在市卫生局的协助下,在33℃至8℃的不同室温下,工作了四十三天,才将南昌市全部奶场的乳样分析完了。兹将全部实验记录,报导如下,以供有关方面的参考。
Introduction Milk is the most perfect foodstuff for nutritious foods, because its nutrients, such as fat, protein, lactose, minerals and vitamins, are indispensable to life. Although the milk yield of all the dairy farms in major cities can not meet the needs of the public at large, it is believed that livestock husbandry will also be properly developed as the motherland’s large-scale economic construction. Nanchang is a city of more than 300,000 inhabitants. There are also 44 large and small milk farms here, over 400 dairy cows, and a total of about three thousand pounds of milk per day. Starting last autumn, with the help of the Municipal Health Bureau, it worked for 43 days at different room temperatures of 33 ℃ to 8 ℃ before analyzing the milk samples of all the dairy farms in Nanchang. All experimental records will be reported as follows for reference of relevant parties.
