Five years ago, the father of QT Lee, a student at the University of Chicago Medical School, had mild hypertension and treated with celery, the ancient and unique drug. Taking 1/4-pound celery stems daily for a week after taking a repeat review showed that blood pressure had dropped to the normal range. Now Lee and pharmacist W. J Eliot of the medical school made a plausible explanation for this apparent therapeutic effect. They found that celery contains 3-n-butyl phthalide, a chemical that broadens the smooth muscle relaxation of blood vessels and lowers blood pressure.
