器为茶之父,水为茶之母。古人泡茶用水,已是一门高雅的学问。陆羽曾在《茶经》中明确指出:“其水,用山水上,江水中,井水下。其山水,拣乳泉,石池漫流者上。”在过去,茶与水都极被重视。明代许次纾在《茶疏》中说:“精茗蕴香,借水而发,无水不可与论茶也。”表明水与茶相辅相成,缺一不可。而清代张大复在《梅花草堂笔谈》中进一步阐述:“茶性必发于水,八分之茶,遇十分之水,茶亦十分矣;八分之水,试十分之茶,茶只八分耳。”在他看来,水有时比茶还重要。
