目的分析山西省太原市6年食品安全风险监测结果,了解市售食品中食源性致病菌的污染情况,为食品安全管理政策提供科学依据。方法对太原市10个区(县)食品流通和餐饮服务环节随机抽取样品,按样品原有储存温度要求在最短时间内送达实验室,按相关的食品安全国家标准中规定的程序和方法进行检测。结果共采集25类1 923份样品,总检出率为9.62%;共对9种食源性致病菌进行检测分析,其中铜绿假单胞菌和蜡样芽胞杆菌的检出率比较高,分别为20.83%、20.49%;盒饭、乳与乳制品(成人)、生肉、流动早餐的污染比较严重;散装食品的检出率高于包装食品。结论太原市市售食品中食源性致病菌污染较为严重,相关部门应采取措施,加强食品的监测力度,确保市民的食品安全。
Objective To analyze the 6-year food safety risk monitoring results in Taiyuan, Shanxi Province to understand the contamination of food-borne pathogens in the commercial products and provide a scientific basis for food safety management policies. Methods Samples were randomly taken from food circulation and food service links of 10 districts (counties) in Taiyuan City. Samples were taken to the laboratory in the shortest time according to the original storage temperature of the samples. The procedures and methods as prescribed in the relevant national food safety standards Detection. Results A total of 1 923 samples of 25 species were collected with a total detection rate of 9.62%. Nine kinds of food-borne pathogens were detected and analyzed. The detection rates of Pseudomonas aeruginosa and Bacillus cereus were relatively high, 20.83% and 20.49% respectively. The prevalence of box-fed, milk and dairy products (adult), raw meat and mobile breakfast was more serious. The detection rate of bulk food was higher than that of packaged food. Conclusion The food-borne pathogens in Taiyuan market are more polluted. Relevant departments should take measures to strengthen the monitoring of food and ensure the food safety of citizens.
