目的了解当前承德市食品安全现状,做好食品安全风险评估工作。方法按照《食品化学污染物和有害因素监测工作手册》和《食源性致病菌监测工作手册》,应用原子荧光法和气相色谱法等检测重金属及食品添加剂等指标。结果化学污染物及有害因素监测979份,超标23份,超标率2.35%;食源性致病菌监测929份,检出14株,超标率1.51%。结论部分食品受到铅、总砷、总汞、镉、山梨酸和食源性致病菌的污染,应加大监管力度,加强对食品从业人员的卫生知识培训,提高食品生产经营单位的卫生水平,增强全社会对食品安全的重视程度。
Objective To understand the current status of food safety in Chengde and do a good job in food safety risk assessment. Methods According to “Food Chemical Contaminants and Hazardous Factors Monitoring Manual” and “foodborne pathogens monitoring manual”, using atomic fluorescence spectrometry and gas chromatography and other indicators of heavy metals and food additives. Results A total of 979 chemical pollutants and harmful factors were monitored, exceeding the standard of 23, exceeding the standard of 2.35%. 929 food-borne pathogens were detected, of which 14 were detected, exceeding the standard of 1.51%. Conclusion Some foods are polluted by lead, total arsenic, total mercury, cadmium, sorbic acid and food-borne pathogens. Supervision should be stepped up, health knowledge training for food practitioners should be strengthened, health level of food production and operation units should be improved, Enhance the society’s emphasis on food safety.
