目的了解厦门市居民膳食中铅、镉摄入量,评估厦门市居民膳食铅、镉的安全性。方法对2004—2010年厦门市市售食品中铅、镉含量进行监测,结合2010年厦门市居民食物消费量调查结果,对厦门市居民膳食中铅、镉暴露水平进行评估。结果厦门市居民平均每周膳食中铅摄入量为16.4μg/kg BW,占原暂定每周可耐受摄入量(PTWI)的65.6%;平均膳食铅暴露的暴露边界比(MOE)为0.5;平均每月膳食中镉摄入量为34.6μg/kg BW,占暂定每月可耐受摄入量(PTMI)的138.4%。结论厦门市居民铅的膳食暴露问题不容忽视,镉的膳食暴露问题较严重,应努力降低各类食品中铅、镉水平。
Objective To understand the dietary intake of lead and cadmium in Xiamen residents and assess the safety of dietary lead and cadmium in Xiamen residents. Methods The levels of lead and cadmium in commercial foods in Xiamen City from 2004 to 2010 were monitored. Based on the survey of food consumption of residents in Xiamen City in 2010, the level of lead and cadmium exposure in Xiamen residents was evaluated. Results The average daily intake of lead in Xiamen residents was 16.4 μg / kg BW, accounting for 65.6% of the original PTWI. The average MOE of dietary lead exposure was 0.5 ; The average monthly dietary intake of cadmium was 34.6 μg / kg BW, accounting for 138.4% of the tentative monthly tolerable intake (PTMI). Conclusion The dietary exposure of lead in Xiamen should not be neglected. The problem of dietary exposure to cadmium is more serious. Efforts should be made to reduce the levels of lead and cadmium in all kinds of food.
