[目的]了解吕梁市离石区各类型餐饮业单位食(饮)具消毒情况,更好地加强餐饮业的食(饮)具消毒管理工作。[方法]对2009年离石区432户大、中、小型餐饮单位的4286份食(饮)具消毒效果监测资料进行分析。[结果]检测432户餐饮单位的食(饮)具4286份,合格的2700份,合格率为62.99%。检测合格率,大、中、小型单位分别为82.05%、75.88%、27.87%(P<0.01);蒸汽、电子消毒柜、化学药物消毒的分别为87.90%、61.15%、50.15%(P<0.01);有、无保洁措施的分别为80.86%、28.42%(P<0.01);碗、盘子、筷子、杯子分别为71.44%、71.89%、42.39%、29.66%(P<0.01)。[结论]离石区餐饮单位食(饮)具消毒合格率较低。
[Objective] To understand the disinfection of food (drink) in various types of catering enterprises in Luliang City and to better strengthen the disinfection management of food (drink) in the catering industry. [Method] 4286 pieces of food (drink) disinfection monitoring data of 432 large, medium and small catering units in Lishi area were analyzed in 2009. [Result] There were 4,286 food and drink items in 432 food and beverage units, with 2,700 passes, the pass rate was 62.99%. (P <0.01). The disinfection rates of steam, electronic disinfection cabinet and chemical medicine were 87.90%, 61.15% and 50.15% respectively (P <0.01), the detection qualified rate was 82.05%, 75.88% and 27.87% (P <0.01). There were 80.86% and 28.42% (P <0.01) of the non-cleaning measures respectively, while the bowl, plate, chopstick and cup were 71.44%, 71.89%, 42.39% and 29.66% respectively. [Conclusion] Lishi area catering units food (drink) with a lower disinfection pass rate.
