香菇菌丝在生长发育中是以分解木质素作为主要碳素营养的。木质素是一个以芳香族为基本结构的复杂聚合物。在自然界物质大循环中,它的降解主要是以微生物代谢中产生的多酚氧化酶为催化剂,在常温常压下把复杂的不溶性的聚合物转化为水溶性含有苯环的简单化合物,苯环最后破裂产生简单的有机小分子。由于香菇等木腐菌具有自身合成多酚氧化酶的能力,因此深入研究香菇多酚氧化酶活性,不仅对开发自然界丰富的木质素资源具有重要意义,而是研究香菇生长发育的主要生理基础。我们系统地研究了不同碳源、氮源、微量元素和维生素等营养因子对香菇合成多酚氧化酶的影响。本文报道了香菇菌丝体在生育过程中4种胞内胞外多酚氧化酶活性的动态变化。

We systematically studied the different carbon sources, nitrogen sources, trace elements and vitamins and other nutritional factors on the synthesis of polyphenol oxidase mushroom. In this paper, the dynamic changes of four intracellular extracellular polyphenol oxidase activities in the mycelium of Lentinula edodes were reported.
