果蔬采后病害往往造成巨大的经济损失,通常采用的化学杀菌剂有一定的毒性,影响人体健康且造成环境污染,因此无毒无污染的酵母菌作为生防制剂用于拮抗果蔬采后病菌有着广泛的应用前景。该文综述了拮抗酵母在防治果蔬采后病害方面的研究进展,主要包括拮抗酵母的种类、筛选、作用方式、拮抗机制以及如何提高其生防效力等几个方面,分析了应用抗拮酵母菌存在的问题,并对其商业化前景进行了展望。
