本文介绍了核桃种隔为原料,用蒸馏水浸泡提取,棕色素的研究。实验结果表明,光照,各种食品添加剂对色素影响不太大。但Cu~(2+)和Fe~(3+)离子对色素的影响较大。
This article describes the walnut seedlings as raw materials, distilled water immersion extraction, brown pigment research. The experimental results show that light, a variety of food additives have little effect on the pigment. However, Cu 2+ and Fe 3+ ions have a great influence on the pigment.
