花色冷盘已是宴席中必不可少的菜肴。那千姿百态的艺术造型,栩栩如生的鸟兽花木,形象逼真的山水楼台,无一不具有浓厚的生活气息和鲜明的地方、民族特色,使食客赏心悦目,获得美的享受。但是,现在人们在制作冷盘上带有个人的倾向性或随意性,出现华而不实、失形失意、不注意营养、口味配合不当、浪费原料等问题,如不加以改进,就会使冷菜拼盘失去内在的意义,走入歧途。故此我们想从以下几个方面谈谈自己的看法。
