越来越多的营养学家认为,多食用鱼类对身体有着非同寻常的保健作用,鱼制食品尤其是海鱼制品营养高于家畜和家禽肉制成的食品,具有明显的优点。为了长期保证鱼肉品质,并保持海鱼的肉色不发生褐变,一般来说,需要海鱼的冷藏温度在-20℃甚至更低,这就要求人们加工利用冻结海鱼的时候必须经过合理的解冻,以使鱼肉恢复冻结前的生鲜状态和特性。但在实际的加工生产中,解冻方法往往被人们所忽视。如何解冻才能最大限度的保持海鱼的鱼肉品质显得十分重要。
