凉卷可以作为小吃供应市场,也可以作为冷碟上席。笔者在继承传统的基础上,用五种不同的原料作卷皮,卷进色彩斑斓荤素兼有的卷心,用五种不同的味碟蘸食,风味各异,别具特色。一、鸡皮凉卷(糖醋味型)主料:土公鸡熟鸡皮200克辅料:兰花丝30克、水发蜇皮丝30克、猪熟瘦内丝30克,红甜椒丝30克,葱丝20克。调料:白糖30克,酱油30克,保宁醋30克,番茄酱20克,精盐2克,浓缩鸡汤100克,熟芝麻粉20克。
