蔬菜、水果、薯类和鲜花等属于活体食物或产品,在采摘收获后它们继续进行着生命过程,其中最重要的功能是呼吸,呼吸过程直接地降低食物的新鲜程度,促使它们象老化和衰败方向发展。果蔬预冷却的目的就是要在采收后到贮运前,使用人为的办法将果蔬体温尽快冷却到规定的温度范围,以降低呼吸强度,保持原有品质。
