我们利用FTIR研究了脂肪酶在不同的冻干时间条件下二级结构的变化。研究了酶分子发挥摧化功能起重要作用的体系微环境对脂肪酶分子的二级结构的影响。结果表明,在最适催化温度范围内,酶分子的二级结构的确与其它温度下存在显著的不同。不同pH条件下,酶催化脂交换的活力相差较大,而酶分子的二级结构也确有明显的变化
We used FTIR to study the changes of the secondary structure of lipase under different conditions of lyophilization. The effect of system microenvironment on the secondary structure of lipase molecule was studied. The results show that the secondary structure of the enzyme does not differ significantly from the other temperatures at the optimum catalytic temperature. Under different pH conditions, the lipase-catalyzed lipid exchange has a great difference in the vitality and the secondary structure of the enzyme molecule does have obvious changes
