一、硼在蔬菜的营养生理与效果硼素是作物生长发育必需的微量元素之一,作物对它的需要量虽然不多,但它对作物的生理作用相当大。首先硼对作物体内醣类化合物的代谢、运转起良好作用。硼充足能提高作物的碳水化合物含量。缺硼时作物的输导系统组织遭受破坏,严重阻碍和降低醣类的运转,造成还原糖在叶子里大量积累,从而抑制作物的同化作用。其次,硼能改善作物根部氧气条件,促进根系发育。因此,它能促进豆科作物的根瘤形成和固氮菌的固氮作用。缺硼根部维管束发育不良,醣类运转受阻,而且氧气供应亦受到影响。因此,硼对豆科作物或食用根部的萝卜或深栽的葱类作物等是很重要的营养元素。此外,硼与淀粉磷酸化酶有密切关系。
