公共食堂职业危害因素对炊事员健康影响的调查研究

为研究公共食堂职业危害因素对炊事员健康的影响,本文对40家公共食堂作业环境进行了监测,同时对257名炊事员和54名非炊事员健康状况进行了调查。结果表明,公共食堂作业环境中,粉尘、CO、SO2浓度分别有968%、2903%、161%,超过国家卫生标准;观察组肺功能指标(FVC、FEV1、V50、V25),免疫功能指标(IgG、IgA、IgM)显著低于对照组(P<005或P<001),经吸烟分层后的肺功能比较,所得结论与未分层时相同;观察组肺功能损伤、呼吸系统症状阳性以及患慢性支气管炎的例数均较对照组明显增加,且均具有统计学意义。因此,对炊事员职业性危害问题应予足够的重视。 In order to study the impact of occupational hazards in public canteens on the health of cooks, this paper monitored the operating environment of 40 public canteens and investigated the health status of 257 cooks and 54 non-cooks. The results showed that the concentrations of dust, CO and SO2 in public canteens were 968%, 2903% and 161%, respectively, which exceeded the national health standards. The pulmonary function indexes (FVC, FEV1, V50, V25 ), And the indexes of immune function (IgG, IgA, IgM) were significantly lower than those of the control group (P <005 or P <001) The lung injury, respiratory symptoms and the number of cases of chronic bronchitis in the observation group were significantly higher than those in the control group, both of which were statistically significant. Therefore, the occupational hazards of the cook should be given due attention.
