[目的]了解马鞍山市高危食品中沙门菌、O157︰H7大肠杆菌、单增李斯特菌、阪崎肠杆菌、副溶血性弧菌、金黄色葡萄球菌、弯曲菌的污染状况,提高我市食源性疾病的检测、预警和控制能力,有效地预防、预测食源性疾病的暴发。[方法]依据国家食源性疾病监测网2007~2008年年度工作手册进行。[结果]监测9大类(生肉、水产品、熟肉制品、生食蔬菜、面米食品、非发酵豆制品、婴儿食品、生奶与鲜奶、冰淇淋)食品共381份,检出食源性致病菌129株,总阳性率33.86%,其中沙门菌3.41%,单增李斯特菌14.17%,金黄色葡萄球菌16.27%;9大类食品中生肉污染最严重,阳性率70.37%,而这类食品中又以生鸡肉污染最为突出,阳性率77.78%。[结论]马鞍山市居民主要消费食品存在食源性致病菌污染,主要是沙门菌、单增李斯特菌和金黄色葡萄球菌的污染,9大类食品中生肉和面米食品污染最严重,是重要的危险食品。且食源性致病菌污染有上升趋势。
[Objective] To understand the pollution status of Salmonella, O157: H7 Escherichia coli, Listeria monocytogenes, Enterobacter sakazakii, Vibrio parahaemolyticus, Staphylococcus aureus and Campylobacter in high-risk food in Ma’anshan city, Source disease detection, early warning and control capabilities, effectively prevent and predict the outbreak of foodborne diseases. [Method] According to the national foodborne disease monitoring network 2007-2008 annual work manual. [Result] A total of 381 foodstuffs including raw meat, aquatic products, cooked meat products, raw vegetables, noodles rice, non-fermented soy products, baby food, raw milk and milk and ice cream were monitored. 129 strains of pathogens, the total positive rate of 33.86%, of which 3.41% of Salmonella, Listeria monocytogenes 14.17%, Staphylococcus aureus 16.27%; 9 kinds of food in the most serious raw meat contamination, the positive rate of 70.37%, which In addition, the most prominent type of food is raw chicken, with a positive rate of 77.78%. [Conclusion] The main consuming food of residents in Ma’anshan City was contaminated by food-borne pathogenic bacteria, mainly the pollution of Salmonella, Listeria monocytogenes and Staphylococcus aureus. The raw food of the 9 categories was the most polluted by raw meat and flour rice, Is an important dangerous food. And food-borne pathogens contamination is on the rise.
