莼菜(Brasenia Schreberi Gruel),又名蒪菜、马蹄草,属睡莲科,为多年生宿根性的湖沼草本,原产我国东南部。杭州西湖、萧山湘湖和太湖流域有野生或人工栽培,苏州洞庭公社扬湾一带,有自生种莼菜荡近数百亩。莼菜以嫩茎和嫩叶供食用,地下茎富含淀粉,可制馅心。嫩茎及幼叶外附透明胶质,做汤入口润滑,别具风味。据中药大辞典资料,莼菜成分含有少量维生素B_(12),胶质中含L-阿拉伯糖5.9%,L-岩藻糖10.9%,D-半乳糖34.1%,D-葡萄糖醛酸17.3%,D-甘露糖13.4%,L-鼠李糖11.4%,D-木糖7%,并含有半乳糖醛酸,D-果糖,D氨基葡萄糖
