白果又称银杏,为银杏树的果核,是人们日常生活中的保健食品和烹饪菜肴之佳品。经常食用,可以滋阴养颜,扩张微血管,促进血液循环,延年益寿。其中的黄酮甙、苦内脂对脑血栓、老年性痴呆、高血压、冠心病等还具有特殊的预防和治疗效果。但白果有一定毒性。白果中毒,主要是因生食或食未经熟透的白果所致。白果中毒儿童多见,一般中毒剂量为10~50颗。幼儿生食5~10粒即可引起白果中毒。炒熟或煮熟的白果不易中毒。
