罗汉肚(图1)主料:猪后臀尖,猪肚。配料:蛋清,蛋黄,胡萝卜,少量猪肉皮。调料:味精,盐,香油,五香粉,葱,姜米,料酒。做法:猪臀尖改刀切微厚片;胡萝卜切小滚刀块儿;蛋清、蛋黄分开蒸成糕后,切成菱形块;肉皮焯熟切成小丁待用;猪肚洗净去肚油;把上述所有调料及配料放入切好的肉片内和匀,装入猪肚内用竹签封好口,上屉蒸制两个半小时(注:肚内肉不要放太多)。
