目的了解农村寄宿学校学生膳食情况及学生对膳食的满意度,为提高学生膳食质量提供建议。方法采用分层随机抽样方法,对武汉市3个郊区的7所寄宿制中小学学生160名进行问卷调查。结果农村寄宿制中小学校学生对膳食的满意率为54.12%。小学生平均满意率为79.5%,中学生为25.3%;满意率最高的是在学校“吃饱了”(73.4%),8.5%的学生认为“没有吃饱”。学生对膳食最不满意的是学校饭菜的滋味,满意率为42.6%;其次是膳食营养,满意率为43.6%。在食物结构上,寄宿学生与走读学生在猪肉、禽、蛋类、鱼、豆制品、水果和零食摄入上差异均有统计学意义(P值均<0.01),寄宿学生膳食平衡性好于走读学生。结论寄宿学校膳食基本满足学生吃饱要求,但质量不高,不能适应学生生长发育的需求,需要提高膳食制作的科学性。
Objective To understand the dietary conditions of students in rural boarding schools and the satisfaction of students with their meals, so as to provide suggestions for improving the quality of students’ diet. Methods A stratified random sampling method was used to survey 160 students from 7 boarding schools in three suburbs of Wuhan. Results The satisfaction rate of students in primary and middle schools in boarding schools was 54.12%. The average satisfaction rate of primary school students was 79.5% and that of middle school students was 25.3%. The highest satisfaction rates were at school “full” (73.4%) and 8.5% of students considered “not enough”. Students most dissatisfied with the diet is the taste of school food, satisfaction was 42.6%; followed by dietary nutrition, satisfaction rate was 43.6%. On the food structure, there was a significant difference in the intake of pork, poultry, eggs, fish, soy products, fruits and snack between boarding and attending students (P <0.01), and boarding students had better dietary balance Students studying. Conclusion Boarding school meals basically meet the requirements of students full, but the quality is not high, can not meet the needs of student growth and development, the need to improve the scientific scientific diet.
