葡萄在贮藏过程中最重要的问题是干柄、掉粒和腐烂。葡萄的腐烂变质是由于果穗受到机械伤害后,灰霉菌从伤口侵入并大量繁殖所致。葡萄在贮藏期间极易失水,造成干柄和掉粒。贮藏过程中,为控制葡萄干柄,掉粒和腐烂变质,要求库内适宜温度为-1℃~0℃,相对湿度为90%~95%,以延缓穗梗的干枯,同时采用防腐措施,阻止灰霉菌的繁殖,避免果实腐烂,常用的方法有:
