对哈尔滨市两所幼儿园5~6岁儿童的膳食营养素摄入情况和锌营养水平进行调查,并在不加干预的自然生活、饮食条件下,利用代谢平衡法观察儿童的锌代谢情况。结果表明:A、B两园儿童膳食锌和蛋白质摄入量分别为514mg/日、337g/日和284mg/日、281g/日,均未达到膳食供给量标准;A园儿童生长发育水平高于我国同龄儿童标准(P<005),B园则有低于此标准的趋势;A园儿童的锌排出量、储留量及表观吸收率高于B园(P<005)。综合A园儿童的锌营养水平和代谢情况,本文初步确认中国5~6岁儿童的锌营养需要量为5~6mg/人/日。本研究测定出5~6岁儿童每日发锌排出量(经由头发的锌损失量)为3~11μg/日。
The intake of dietary nutrients and zinc nutrition of children aged 5 ~ 6 years in two kindergartens of Harbin were investigated. The metabolic balance was used to observe the zinc metabolism in children under the conditions of natural life and diet without intervention. The results showed that the intake of dietary zinc and protein in children A and B was 514mg / day, 337g / day and 284mg / day, 281g / day, respectively, which did not reach the standard of dietary supply. The growth and development level of children in Park A was higher than that of children of the same age in China (P <005), while that in Park B was lower than that of Park A. Children’s Park A children’s zinc output, storage and apparent absorption rate were higher than B Park (P <0 05). Based on the zinc nutrition status and metabolism of children in Park A, we initially confirm that the zinc nutrition requirement of 5-6-year-old children in China is 5-6 mg / person / day. This study determined that children aged 5 to 6 years, hair zinc excretion (loss of zinc through the hair) is 3 ~ 11μg / day.
