苹果果实的维生素 C 含量,在各种水果中是比较低的。据报导苹果果实每100g 果肉中维生素 C 含量在5—46mg 之间;贵州农学院生化营养研究室,在1964—1965年分析了39个苹果品种,其维生素 C 含量每100g 果肉在1.37—8.13mg 之间。日本曾报导苹果果实维生素 C 含量最高40mg/100g 果肉,一般品种在10mg 上下。
