蜂蜜,就是由蜜蜂徒花蕊裏吸取了蜜汁,吐入巢房後經過天然的轉化和蒸發成功的一種带有特殊香味的稠厚蜜糖。各種蜂蜜所含的成份,多少各不相同。它們包含的成份平均約爲:果糖百分之三九,葡萄糖百分之三四,水份百分之十七,蛋白質百分之二,礦物質百分之○·八,蔗糖百分之○·四,有機酸百分之一·五,蜂臘百分之一,其他百分之四·三。 沒有加工通的各種蜂蜜,一到冷天多要結晶,有的全部結晶,也有一部分結晶的。結晶後颜色燮白,成爲脂状或粒状的晶體。部分結晶的蜂蜜,晶體沉在下面,稀薄的槳液就浮在上面分
