维生素是维持人体健康所必需的低分子有机化合物。人体对维生素的需要量虽然不大,但又不可缺少。目前已知的维生素有20余种,大致分为两类:一类是能够溶解于脂肪的,叫脂溶性维生素,包括维生素A、D、E、K,脂溶性维生素大量存在于肉类、鱼类、动物肝脏、牛奶、豆类、蛋白类食品里;另一类是能够溶解于水的,叫水溶性维生素,包括B族维生素和维生素C等,水溶性维生素主要存在于谷物外皮、豆类、肉类、蛋黄、干果和蔬菜里。
