农家美食一——浆水面浆水面是老西北的一种面食,也是农村人日常食用最多的一种面食。浆水面就是把葱花过油到稍焦时将浆水倒入炝到微沸即可舀出,然后炒一盘素韭菜做为提味的炒菜。待一指头宽,薄似纸的手工面下熟捞碗后浇上浆水,调上炒过的韭菜、油泼辣子、细盐后即可食用。冬吃能取暖,夏吃能消暑。万不能再加醋,有醋则涩,切记。另外,浆水酸而不烈,气味芬芳。消淡味醇,爽滑利口,醇香醒神,余味悠长。
