食品中还原型维生素C在酸性条件下能够与碘-淀粉体系中的碘结合,生成稳定的络合物,其绝对吸光值符合朗伯比尔定律,可比色测定。其最大吸收波长为610nm,线性范围为1~20μg/mL(r=0.9993),回收率在94.03%~98.90%之间。
Reduced vitamin C in food can combine with iodine in starch system under acidic conditions to form stable complexes with absolute absorbance according to Lambert’s law and comparable colorimetric determination. The maximum absorption wavelength was 610 nm with a linear range of 1 ~ 20 μg / mL (r = 0.9993). The recoveries ranged from 94.03% to 98.90%.
