检测蜂王浆中的蛋白质含量是衡量蜂王浆质量的重要指标之一。其测定方法仍采用传统的凯氏定氮方法(商业部蜂王浆标准未公布),该法缺点是操作繁琐、步骤多,受外界干扰大,不易及时得到理想的结果,测定一个样品至少需要3~4小时。我们在蜂王浆成分的研究中,摸索出了一种比色测定蜂王浆中蛋白质的方法,其原理是利用蛋白质遇硝酸呈黄色反应,再测其吸光度,通过标准曲线进行含量计算。
Detection of royal jelly protein content is one of the important indicators to measure the quality of royal jelly. The determination of the method is still using the traditional Kjeldahl method (Ministry of Commerce royal jelly standards unpublished), the shortcomings of the method is cumbersome operation, more steps, subject to large external disturbances, not easy to get the desired results in time, the determination of a sample requires at least 3 ~ 4 hours. In the study of royal jelly composition, we explored a method for the colorimetric determination of protein in royal jelly. The principle is to use the protein to react yellowish with nitric acid, measure the absorbance and calculate the content through the standard curve.
