目的了解河南省商丘市2007—2008年餐具消毒效果及其影响因素。方法餐具的采样和检验方法依据中华人民共和国《食(饮)具消毒卫生标准》(GB14934-94)相关规定进行。结果 2007—2008年商丘市餐具监测合格率分别为82.2%和92.1%,2008年监测合格率高于2007年(χ2=21.62,P<0.01);大型餐饮单位餐具监测合格率高于中、小型餐饮经营户(χ2=59.91,P<0.01)。结论经营户餐具消毒设施的普及使用,餐具消毒意识的增强和规范操作习惯的培养,是提高餐饮业餐具消毒质量的主要因素。
Objective To understand the disinfection effect of tableware in Shangqiu City of Henan Province during 2007-2008 and its influencing factors. Methods The sampling and testing methods of tableware are based on the relevant provisions of the People’s Republic of China on Food and Beverage Hygiene Standard (GB14934-94). Results The monitoring rates of tableware in Shangqiu City during 2007-2008 were 82.2% and 92.1% respectively. The monitoring rate in 2008 was higher than that in 2007 (χ2 = 21.62, P <0.01). The monitoring rate of tableware in large catering units was higher than that of middle and small scale Restaurant operators (χ2 = 59.91, P <0.01). Conclusion The popularization and use of disinfecting facilities for business households, the awareness of disinfecting tableware and the cultivation of standardized operating habits are the main factors to improve the disinfection quality of tableware in catering industry.
