厨房空间与环境设计实际上就是对厨房的工作环境及各种附属设施进行规划与安排的过程。过去人们忽视、淡漠厨房内部环境的规划与设计,将更多资金投入到餐厅的装潢与翻建中,把厨师安排在阴冷、潮湿、肮脏、拥挤的厨房里工作,这样只能造成厨师劳动效率低下,身体疲劳度增加。由此,改善厨房空间与环境,通过合理地设计,来营造最佳的工作氛围,保证厨师能以良好心情来工作,是非常必要的。
