“粒粒橙”橙汁是一种果汁类酸性饮料,pH为3.46。一般认为,金黄色葡萄球菌适宜生长在pH6.0~8.0,水分较多,蛋白质和淀粉较丰富的食品中。而果汁的pH值较低,而且含有的糖度也较高,这些都能抑制某些微生物的发育繁殖。因此,在果汁饮料中检出金黄色葡萄球菌的可能性极少。而本文却从pH3.46的粒粒橙饮料中检出金黄色葡萄球菌。现将检测结果报告如下。1 材料方法1.1 样品来源 本县某厂生产的饮料,该饮料由粒粒橙、香精、蔗糖和过滤水混合而成,不作任何消毒,玻璃瓶装,样品由生产
