目的了解某市餐饮食品安全状况,为制定食品安全监管措施提供科学依据。方法 2014~2015年,在蚌埠市辖区内的生产和餐饮环节抽取食品进行检测,并对检测数据汇总分析。结果 2014~2015年蚌埠市抽检餐饮食品安全样品571批次,不合格74个批次,不合格率为12.96%;生产环节抽检319个批次,不合格37个批次,不合格率为11.60%,不合格项目包括标签、大肠菌群、甜蜜素、霉菌和过氧化值等;餐饮环节抽检252个批次,不合格37个批次,不合格率为14.68%,不合格项目包括菌落总数、馅料含量、纳他霉素和大肠菌群等。结论蚌埠市食品安全总体状况良好,食品安全基本符合国家对食品的要求,部分抽检样品不合格,需进一步加强对重点食品和重点批次的监管,预防食品安全事故的发生。
Objective To understand the food safety status of a city and provide a scientific basis for the formulation of food safety regulatory measures. Methods From 2014 to 2015, food was extracted from the production and catering sectors in Bengbu City and the test data were collected and analyzed. Results A total of 571 batches of food safety samples sampled from 2014 to 2015 in Bengbu City were rejected, of which 74 were unqualified. The unqualified rate was 12.96%. There were 319 batches sampled in the production process and 37 batches failed. The unqualified rate was 11.60 %, Substandard items include labels, coliform bacteria, cyclamate, mold and peroxide value; catering section sampling 252 batches failed 37 batches, the failure rate was 14.68%, substandard items include the total number of colonies , Fillings, natamycin and coliform bacteria and so on. Conclusion The overall food safety in Bengbu is good. The food safety basically meets the requirements of the state for food. Some of the sampling samples are unqualified. The supervision of key foodstuffs and key batches needs to be further strengthened to prevent the occurrence of food safety accidents.
